Coriander Pesto


Today my Matryoshkas Doll measuring cups helped me make this delicious coriander pesto. Its a very simply and very tasty recipe.
Combine 2 cups of fresh coriander leaves with 1 clove of garlic, 1/4 cup roasted cashew nuts (I used half cashew/half pine nuts) and a 1/3 of a cup parmesan cheese in the bowl of a hand blender. Blend for few seconds, then gradually add 1/2 cup of olive oil while continually blending. Or use the same technique with a mortar and pestle. The end result is one and a bit cups. Eet smakelijk!
